Never understood this. Any great pit master could post up in SFL and crush it.
Problem is likely sourcing wood, meat, etc. That and I would also say that most barbecue people don't go too far from home. That's probably the biggest hangup.
The best BBQ I've had in S. FL was little roadside places that are essentially a hole in the wall or even a trailer setup.
