Went to Austin this past Summer and stopped by Franklin's for some brisket. Was expecting the best brisket of my life. It was garbage compared to anything I've made. But, that's to be expected, IMO. Very hard to beat backyard BBQ when you are smoking at high volume for a restaurant. You just can't put the kind of care into it that somebody would in their backyard.
ill say this as nicely as I can, this sounds a lot like CIS bench press numbers, franklins is amazing

Thanks brother, brisket can have a mind of its own sometimes but I'm pretty satisfied with my technique, comes out on point (pun intended) most of the time. I have Mario-esque OCD when I trim them but it usually pays off, hopefully his coordinator searches do as well.

May have been that it was about my 5th BBQ meal in 36 hours but a) the meat sweats are a real thing and b) Pecan was down near the bottom of the list.
Bro. Lol. The meat sweats are for real. You really gotta hold it down and push through. Last time I felt that I was at a TexasdeBrazil and was determined to try everything, refused to turn my card over to stop the waiter. Felt like I was trying to eat the ole 96er

This. I’m an admitted BBQ snob. I hit up restaurant after restaurant after talking to other people, looking to be wowed. 95% of the time, I end up disappointed. My stuff usually tastes better. And it’s because of the reason you stated.
