Canned Tomatoes (San Marzano) are the way to go in Making Marinara...he probably means for me to Jar it once it's done. Fresh Roma/Plum Tomatoes can't be beat...but is Labor intensive in regards to peeling, de-seeding, etc....Cans you uncultured swine. No self respecting Italian uses tomatoes in a jar.
