I like Mad Scientist BBQ. Definitely agree that if you are going to wrap your brisket, wrapping it with Wagyu Beef Tallow is the way to go. I think you get better results by NOT wrapping the brisket though.

He did a good 3 part series comparing different techniques when cooking brisket.
