OL is so hard to gauge. There's a lot of big people out there, so that part is easy. I'd look at how light someone is in their feet, which goes hand in hand with balance, and their wingspan. Obviously they have to have the frame, there are big dudes with tiny *** legs, etc. Can they gain positive weight, lose negative weight? Getting stronger is always a possibility. I want smart guys here. The rest can all be taught.
In general, their footage will feature them going against mostly little Timmie's. That's where actual game footage can become invaluable as highlights won't tell you much at all. There's some quick as **** smaller types that'll put up a career day against quality D1 athletes because they're too manuevarble. Game footage will show you how they deal with that and what kind of footwork and balance they have, hence light on their feet.
My 12 year old, this year or next he's going to start working with a trainer for speed training and explosive movement. This winter he's going to do martial arts. He'll have the size unless he just quits growing, but both of those will help him in the long run.
Hope some of these lower / mid tier kids work out. You just never really know (in particular as a fan, not taking a deep dive into film or having them workout for you) how it'll go. With the portal, it doesn't even really matter as you can change the roster up quick if need be.
